This grilled chicken chickpea salad is topped with feta cheese, a simple and inexpensive lunch. Chickpeas are one of my favorite pantry staples – I always have a can at hand. Each serving of this salad contains 30 grams of protein. This can be increased by adding grilled roast chicken or the rest of the chicken breast. It is also rich in dietary fiber. Easier and more budget-friendly high-protein lunch recipes are this chick bean tuna salad, a spicy canned salmon rice bowl, and a savory cottage cheese bowl.

How to make grilled chicken chickpea salad

Grilled chicken chickpea salad ingredients

This is the ingredient for this Greek-style chickpea salad.

  • protein: Grilled chicken, chickpeas, feta cheese
  • vegetable: Mini cucumbers, grapes or cherry tomatoes, red onions
  • dressing: Extra virgin olive oil, lemon juice
  • spices: Salt, dried oregano

How to prepare a meal

This chicken chickpea salad recipe is enough for 2 servings, but double or triple the recipe to feed more people. You can prepare this salad the night before planning to eat it.

  1. Mix chicken, chickpeas and vegetables with lemon juice and half of olive oil and sprinkle with salt.
  2. Divide into two food storage containers and place feta cheese, oregano, and the rest of the lemon and oil on top.

variation:

  • Chickpea: You can replace chickpeas with canned white beans.
  • cucumber: I used a mini cucumber that is thin and does not need to be peeled. If you can’t find the mini cucumber, you can also use English or Persian cucumber. If you buy a regular cucumber, peel it because it is thick and bitter.
  • onion: Exchange the red onions for Shallot.
  • tomato: Fresh sub-sun-dried tomatoes.
  • vegetable: Add avocados or peppers for more vegetables.
  • lettuce: Serve this chicken chickpea salad on top of mixed greens or chopped romaine lettuce.
  • cheese: If you don’t like feta cheese, skip it.
  • Herbs: Use dried basil or thyme instead of oregano, or use fresh herbs.

  • 15 Oz You can make chickpeas, Rinse and drain
  • Four Oz Yakitori, Or the chest left from the rotisserie, diced
  • 1 Tbsp Extra virgin olive oil
  • 2 Mini cucumber, Chopped
  • 2 Small tomatoes, Sliced
  • 1/4 cup Red onion
  • Juice from one lemon
  • 2 Oz Feta cheese, Collapsed
  • 1/4 tsp Kosher salt
  • 1/8 tea spoon Dried oregano
  • Mix chick beans, chicken, cucumbers, tomatoes and red onions with 1/2 lemon, 1/2 tablespoon olive oil, salt and toss.

  • Divide into two plates and top with feta cheese, dried oregano, and the rest of the lemon juice and olive oil.
